Here’s another one of my recipes, and I’ve made sure it’s not just super tasty but also sneakily good with veggies. It’s crazy easy, and guess what? Even the kiddos at home are big fans!

1 pound Zucchini, grated
1 cup Corn Kernels
1/4 cup Parmesan Cheese, grated
1/3 cup Mozzarella Cheese
1/4 cup Onion, grated
1 clove Garlic, finely minced
1 tbsp Dried Parsley
1 tsp Salt
1/2 tsp Freshly Ground
Black Pepper
1/2 tsp Dried Basil
1/2 tsp Dried Oregano
1/4 tsp Paprika powder
1 cup All-Purpose Flour
1 tsp Baking Powder
Oil spray
Any Vegetable
Gluten (Wheat, Oats, Rye, Barley), Wheat, Garlic, Cheese, Cow Milk Protein, Dairy Products, Lactose, Corn
Begin by grating the zucchini and onion. Squeeze out any excess moisture from the grated zucchini using a clean kitchen towel or cheesecloth.
In a large mixing bowl, combine the grated zucchini, corn kernels, grated parmesan cheese, mozzarella cheese, minced garlic, grated onion, dried parsley, salt, black pepper, basil, oregano, and paprika. Mix well.
Add the all-purpose flour and baking powder to the vegetable mixture. Stir until all ingredients are thoroughly combined and you have a batter-like consistency.
Set your air fryer to 180°C for 12 minutes and press START. Your nutricook air fryer will preheat automatically.
Once the air fryer has preheated, lightly spray the air fryer basket with oil spray to prevent sticking.
Using a spoon or your hands, shape the vegetable mixture into small fritters.
Place the fritters in a single layer in the air fryer basket, ensuring they’re not overcrowded.
Flip the fritters halfway through the cooking time for even browning.
Once done, remove the fritters from the air fryer and serve hot.
