Back in India, every time I hit the theatre, there was one thing on my menu-samosa! The theatre samosa was just something else, so different and bursting with flavor. Now, I’ve recreated that magic with a little twist of my own, and here’s the bonus-it’s not oily because it’s air-fried. Try it out for that nostalgic theater snack with a healthy twist!

Directions
For Dough
In a bowl add flour, salt & carrom seeds.
Add the ghee and rub it with the flour.
Once mixed well, start by adding water 1 tbsp at a time until it becomes a stiff dough.
Knead well & cover for 1 hour.
For the Filling
In a pot, boil your potatoes. Once cooked, let them cool down and cut them into small cubes.
Crush the fennel seeds, ajwain seeds, and black cumin seeds for samosa powder
Heat the oil, add hing, and a pinch of cumin seeds.
Add grated ginger, chopped mint, and coriander leaves, and sauté for 2 minutes
Add the green chili paste, garam masala, coriander powder, and the samosa powder made earlier. Sauté on low flame.
Add boiled potatoes, green peas, salt, dry amchur powder, and cumin powder. Mash the potatoes while sautéing. Mix well and let it cool.
After the dough has rested for an hour, knead it again lightly.
Divide the dough into equal portions and roll each portion into a small disc.
Take one disc of dough and fold it into a cone shape sealing the edge with a little water.
Fill each cone with the prepared potato and pea mixture, leaving some space at the top.
Seal the top of the cone by folding and pressing the edges together firmly. Ensure they are sealed tightly.
Set the air fryer at 180°C for 25 minutes and press START. Your nutricook air fryer will preheat automatically.
Once the air fryer has preheated, place the samosas in the air fryer basket, leaving space between each piece for proper and even cooking.
Lightly brush or spray the samosas with oil, flipping them halfway through to ensure even cooking and a crispy texture.
