I’ll be honest, I’m not the biggest fan of vegetables, but this recipe makes it so easy to enjoy them even the ones you might not love. It turns veggies into something so creamy and seriously yummy. Give it a shot, especially if you’ve got someone in your life who’s a bit picky about their greens, just like me!

Directions
In a saucepan, melt butter over low heat. Add all purpose flour and stir continuously for a few minutes until it forms a smooth paste.
This is called a roux. Gradually pour in milk while stirring continuously to avoid lumps. Continue to cook and stir until the sauce thickens.
Add cheddar cheese, black pepper, and salt to taste. Stir until the cheese is fully melted.
Set the sauce aside.
Steam or boil the diced carrots, potatoes, and beans until they are partially cooked. They should be slightly tender but not completely soft.
Drain and set aside. In a pan, heat 1 tsp of oil. Add minced garlic and onions.
Sauté until they become translucent. Stir in the mixed herbs and salt. Cook for another minute. Put the boiled veg into the pan and saute for 3 to 5 minutes.
Set your air fryer to 175°C for 12 minutes and press START. Your nutricook air fryer will preheat automatically.
In a mixing bowl, combine the partially cooked mixed vegetables and the prepared bechamel sauce.
Transfer the vegetable mixture into an oven-safe dish that fits inside your air fryer basket. Sprinkle cheese topping evenly over the vegetable mixture
Place the oven-safe dish in the preheated air fryer.
Cooking time may vary depending on the thickness of your vegetable slices.
Once done, remove the dish from the air fryer. Allow it to cool for a few minutes, then serve.
